He previously served as St Helens’ Super League head coach. For the Newcastle Knights, Penrith Panthers, and Sydney Roosters in the National Rugby League in the 1990s and 2000s, he was a goal-kicking halfback. With the Newcastle Knights and head coach Warren Ryan, Holbrook started his National Rugby League career in 1999.

He played for the Royce Simmons-coached Penrith Panthers during the 2001 NRL season. Holbrook participated in the 2002 NRL season for the Sydney Roosters, who were coached by Ricky Stuart.
